For the cheese escalopes, pound the escalopes, season with salt and pepper. Place the cutlets on a baking tray, spread the grated cheese over them and pour the whipped cream over the cutlets.

Bake the escalopes at 220°C for 15 minutes and then turn down to 150°C and bake for about 1 hour. Serve the cheese escalopes.
