Remove the outer green leaves from the cauliflower. Hollow out the stalk with a small sharp knife.

Cook in salted water for about 25 minutes until al dente.

In the meantime, toast the breadcrumbs in the butter-oil mixture until light brown and pour over the cauliflower florets.

Serve the cauliflower with buttered breadcrumbs.
