Instructions:

Separate the eggs and mix the butter, sugar and egg yolks until creamy. Add the milk and flour alternately.

Beat the egg whites until stiff and add the salt and lemon zest.

Heat a waffle iron, grease it and bake the batter into golden brown waffles.

For the topping, peel the kiwis, cut them into slices and set aside. Peel and fillet the oranges as well and set aside.

For the wine foam, stir the yolks together with the sugar as well as the salt in an ovenproof baking bowl.

Whisk the egg mixture with the whisk of an electric hand mixer until a thick whitish cream is formed and the sugar has dissolved.

Place the baking bowl with the egg mixture in the hot water bath and gradually add the sherry while stirring.

Whisk the cream in the water bath until a thick, airy foam forms. The water must not make it.

Place the kiwi slices and orange fillets on the fresh wafers and spread the wine foam evenly over them.
