Braised Prime Rib with Mushroom Sauce

Rinse the mushrooms and soak them for half an hour in a quarter of a liter of lukewarm water. Season the meat with salt, season with pepper, rub with mustard and fry in oil until brown on all sides. Together with diced greens and onion slices in a roaster form. Add beef broth, red wine and the mushrooms with the soaking water to the meat.

Steam in the oven with the lid closed at 200 degrees for about 120 minutes. Remove the meat and thicken the sauce with whipped cream and flour. Serve the sauce with the meat separately.

Serve with carrot vegetables, steamed spring onions and potato dumplings.
