For braised pork peel onion, chop into cubes, peel garlic. Wash the meat, cut into cubes of 3 cm edge length. Crush the pimento seeds in a mortar. Heat the oil and caramelize the sugar in it, stirring continuously over medium heat until golden brown.

Add the diced onion and the meat and brown over high heat, stirring. Press the garlic, add and fry briefly.

Wash the fresh thyme and shake it dry. Add the thyme, water, salt, pepper and allspice to the meat, stir and simmer in a closed saucepan over low heat for about 1 hr.

If the sauce has thickened too much, add a tiny bit of water. Before serving, remove the thyme sprigs and serve Braised Pork hot.
