Rinse apples and cut into eighths. In a saucepan lightly cover with tap water, add sugar and sauté. Spread through a sieve, add half the amount of butter, cinnamon and juice of one lemon, mix. Grease an ovenproof dish with the remaining butter and pour puree into it.
Whip egg whites with sugar to stiff peaks, spread over the apple puree.
Bake in oven at 220 degrees Celsius until surface is lightly browned. Can be served cooled or warm.
Tip: Cinnamon gives dishes a wonderfully sweet and spicy note!
