For the avocado quesadilla, peel the avocado and cut it into small pieces. Place a tortilla in a pan, without oil.
Sprinkle half of the cheese on top and spread the avocado pieces on top. Sprinkle with the rest of the cheese and place the other tortilla on top.
Heat over medium heat until the tortillas are crispy and the cheese has melted. After about 3-4 minutes, turn the quesadilla once.
It’s best to take a plate to help you flip so the tortillas don’t slide apart. Transfer to a plate and serve the avocado quesadilla while still hot.
