Remove skin from apples and cut into quarters. Remove the core. Cut apple quarters into wedges, add wine, sugar, very thinly peeled lemon peel and vanilla pulp and bring to the boil on 3 or possibly automatic heat 5 to 6. Cover and simmer for 4 to 5 minutes on 0, remove from heat.
Briefly rinse dates, remove skin, then cut in half and remove seeds. Cut halves lengthwise. Remove lemon peel from compote. Fold the date strips into the warm compote and allow to cool.
Whip the cream with the vanilla sugar using a mixer until stiff. Layer compote and whipped cream alternately in a bowl, sprinkle with chopped pistachios.
