Instructions:

For the apple casserole, heat the butter in a heatproof glass dish, add the sugar and let it caramelize. Cut the peeled apples into wedges and place them on the caramelized sugar. Cream the yolks, butter, sugar, and vanilla sugar, add the semolina and curd, then mix with the lemon zest until combined. Fold in the stiffly beaten egg whites. Spread this mixture on the apple slices and then bake for 30 minutes in an oven preheated to 150° C. For the cinnamon mousse, mix QimiQ with cinnamon powder and powdered sugar until smooth. Fold in the whipped cream, allow to cool thoroughly in a bowl and serve with the apple soufflé.
