Mix the flours well with the sugar and the dry ingredients. Dissolve the salt in the water, add and knead well with the mixer. Then knead on a floured work surface until the dough no longer sticks. Place the dough in a Roman pot, cover and place in the sink filled with warm water. Let the dough rise for about 1.5 hours. Then place the pot without the lid in the oven preheated to 200 °C and bake for about 1 hour.
