For the vegetable strudel, cut the cauliflower into small florets, clean the carrots and grate or cut into thin sticks and boil in salted water for about 3 minutes.

In the meantime, cut the half melanzani into small pieces and mix in a bowl with the lean curd, sour cream, parmesan cheese, breadcrumbs, soup seasoning and chopped parsley.

Now stir in the strained cauliflower and carrot pieces as well. Mix all ingredients well and season with salt. Roll out the puff pastry and place the vegetable filling in the center, then fold the pastry into a strudel.

Finally, brush with a little beaten egg and place in the oven for 30 minutes at about 180 ° C hot air.
