For the melanzani casserole, brown the minced meat in oil. Finely dice the onion and add. Sauté for 10 minutes. Add a large can of tomatoes. Season with salt, pepper and basil. Simmer the sauce on low heat for about 1 hour.

Meanwhile, peel the melanzani and cut them into thin slices. Salt them and let them stand for half an hour. Then lightly squeeze the slices of melanzani and dry them. Then coat the melanzani in beaten eggs (with a pinch of salt) and in flour and fry them in hot fat.

In a gratin dish, alternate layers of minced meat, Parmesan cheese with mozzarella, ham and baked melanzani. Finish with cheese.

Bake the melanzani casserole for 1 hour at 210° C in a preheated oven.
