The older a cheese is, the more pronounced its flavor. Try to get a cheddar for this noble egg dish (pintage cheddar, e.g. Coon). Fresh kitchen herbs round out the strong good taste.

1. thoroughly mix eggs with herbs, salt and pepper in a small baking bowl.

2. Heat butter in a non-stick frying pan over medium heat until smoking point. Swirl the skillet to distribute the fat. Pour eggs into skillet and cook, stirring, until set, about 10 seconds. Pull solid egg mixture from edge to center with a fork, holding skillet diagonally so that any liquid egg flows to edge. 3. Once omelet is evenly lightly set, continue to cook for 1 to 1 1/2 minutes, sprinkle with cheese, and slide half of the finished omelet onto a plate. Then fold the other half over it and bring it to the table on the spot.
