Cook rice in milk until soft, add salt and let cool. Cream butter with sugar and lemon zest.
Separate eggs and stir in the yolks to the butter-sugar mixture. Then stir into the cooled rice.
Beat the egg whites until stiff and gently fold in.
Peel apples, cut into quarters, slice and stir into the mixture.
Pour the mixture into a buttered baking dish sprinkled with breadcrumbs and bake in a preheated oven at approx. 160 °C for 45 minutes.
Sprinkle with powdered sugar and serve.
