For the carrot-walnut bread, dissolve honey or barley malt and yeast in lukewarm water, add sourdough, flours and spices and knead vigorously for 8 min with a food processor.

Chop carrots and walnuts not too finely and mix into the dough. Cover the finished bread dough and let it rise in a warm place for about 30 minutes.

Knead the dough again and shape it, sprinkle the loaf pan with linseeds and sesame seeds, place the bread on it, sprinkle with water and also with grains on the surface, cover and let it rise again for 30 minutes.

Bake in a preheated oven at 185 °C for about 60 minutes.
