For the curd dumplings, mix the curd with oatmeal, breadcrumbs and salt and stir until smooth. Let stand for 1/2 hour, then stir in egg and flour.
Form dumplings with wet hands, put them into boiling salted water and let them steep at medium heat for about 8 – 10 minutes (as soon as the dumplings float on the surface they are ready).
In the meantime, melt butter in a non-stick frying pan, stir in the breadcrumbs and brown over medium heat. Lift the dumplings out of the water with a slotted spoon, drain, add to the breadcrumbs in the pan, roll in them and serve.
Serve with a green or mixed salad.
