Remove the crust from the bread and cut the bread into small cubes. Soak in milk, then squeeze, strain and put in a bowl. Peel the onion and chop finely. Cut the veal and smoked bacon into small cubes. Wash the mushrooms, dab dry and chop. Heat the butter in a pan, roast the veal and mushrooms in it over a mild heat and finally season with salt and pepper. Remove from heat and let cool a little. Then strain and add to the bowl with the strained breadcrumbs. Mash the egg yolk with a fork and stir into the meat-mushroom mixture with the smoked bacon and onion.Wash the chives and cut into small rolls. Chop the egg white into small pieces. Sprinkle over the spread before serving.
