1. flatten cutlets and sprinkle with mustard seeds. Cover each cutlet with a slice of ham and cheese, roll up and pin with skewers.
2. preheat the oven to 140 °C. Season the meat rolls with salt, season with pepper and brown on all sides in hot butter. Take them out, wrap them in aluminum foil and let them stand in the warm oven for about 1/2 hour.
Heat the drippings again and sauté the diced onions until golden brown. Add wine or stock and cook briefly. Season with salt, cayenne pepper and honey. Serve the rolls in the sauce.
