For the pears in coffee, preheat the oven to 180°C degrees. Wash and peel the pears, cut them in half and remove the core. Place the pear halves side by side in an ovenproof dish.
Mix the espresso with the sugar and bring to the boil in a saucepan. Pour the hot espresso over the pears. Cover the pan with aluminum foil and cook the pears in the oven for 10 minutes. Turn them once in between.
After cooking, remove the pears from the mold and pour the espresso into a pot. Reduce to about a third over low heat until it is viscous and syrupy. Then pour this syrup back over the pears and chill in the refrigerator. Before serving, whip the whipped cream until stiff and pour over the pears. Sprinkle the walnuts on top and serve the pears in coffee.
