For the woodruff mayonnaise, rinse the woodruff leaves with cold water and spin dry. Chop finely.

Stir the yolks with the mustard. Then, while stirring quickly, pour in the grapeseed oil in a very thin stream. Season with a little lemon juice, salt, pepper, balsamic vinegar, Noilly Prat and a pinch of sugar. Now stir in the chopped woodruff leaves and season the woodruff mayonnaise with salt and pepper.
