First make the shortcrust pastry. To do this, knead a smooth dough from the given ingredients and let it rest while you prepare the filling.
For the filling, peel, quarter and core the apples, squeeze the lemon and put the apples in the lemon juice until you are done cutting.
Then drain the apple pieces, grate, mix with honey and cinnamon.
Cut the prepared shortcrust pastry in half. Roll out both pieces until they are as big as the baking sheet.
Line the baking sheet with baking paper, place the bottom pastry sheet on it, spread the filling, then place the top pastry sheet on top and prick it several times with a fork.
Bake the spelt apple pancake at 200 °C for about 40 minutes.
