For ham rolls with apple-horseradish filling, first wash apple, clean, chop as small as possible (peel beforehand to taste) and immediately sprinkle with lemon juice. Drain the pickled gherkins and chop into small cubes.
Mix curd cheese with crème fraîche until smooth, add horseradish, mustard, apple and gherkin cubes. Season well with salt, pepper and a little additional lemon juice to taste.
Unfold ham sheets and lay flat, spread a small amount of the filling on each and roll everything up into tight rolls.
Serve ham rolls with apple-horseradish filling as fresh as possible.
