Stir-fry giros meat in olive oil in wok in several small portions until done (takes only a few minutes). Remove from wok with slotted spoon and set aside. In the frying fat, a little more oil if necessary, stir-fry peppers in turn in narrow strips, celery hearts in fine slices, spring onions in rolls. Add harissa, garlic minced, spices and stir-fry briefly. Mix in tahini, add a cup of vegetable soup, bubble, add drained chickpeas and the meat to warm – heat for another 1 minuet – season with pepper and salt if needed.
Chop cilantro greens and stir in – do not make more! In the meantime, cook couscous with a cup of vegetable soup and a tbsp butter – swell for 5 min.
Tip: Cook only with high quality spices – they are the be-all and end-all in a good dish!
