Instructions:

Cut the meat into narrow strips and together with the dark soy sauce, ketchup, garlic, juice of one lemon and ground coriander in a non-metallic baking dish form.

Mix well so that all together meat is coated by the marinade. Cover and set aside for at least 1 hour.

Heat the vegetable oil in a preheated wok. Add the meat to the wok form and stir-fry for 2-4 min (depending on how cooked you want the meat) or until cooked through.

Add the snow peas (mangetout) and bamboo shoots to the wok mixture and stir-fry over high heat for another 5 min, turning frequently.

Drizzle with the sesame oil and mix well. Transfer to warmed serving plates and bring to the table hot.

Allow the ingredients to work into the meat and make it more tender. A longer marinating time is even better, so that the flavor can fully develop.
