Instructions:

For the radish soup, peel a bunch of radishes and cut the red skin into narrow strips.

Wash and chop all radishes and potatoes, sauté in butter, douse with clear soup and cook for about 20 minutes.

Puree with a hand blender. Serve the soup and garnish each with a spoonful of crème fraîche, radish strips and cress.
