For roasted cinnamon almonds, crack and separate the egg. Set yolks aside and beat egg whites with a hand mixer until stiff peaks form. Combine sugar, vanilla sugar, salt and cinnamon and mix briskly into the snow.
Finally, fold in the almonds and mix so that they are well coated.
Spread on a baking tray lined with baking paper and bake in an oven preheated to 120 °C for about 1 hour. Every now and then, stir the almonds well on the tray so that they do not stick together.
Allow the finished almonds to cool, break apart any pieces that still stick together and enjoy the roasted cinnamon almonds.
