For the gyro pan with long grain rice and tzatziki, first prepare the tzatziki. For this, peel the cucumber, grate finely, drain in a sieve.
Peel garlic, chop finely, mix with curd cheese, yogurt and sour cream or crème fraiche. Squeeze the cucumber rasp well and fold into the curd. Pluck the dill and add to the curd. Season to taste with salt and freshly ground pepper.
For the gyro pan, peel onions, cut into fine slices or possibly slice, season with pepper, vinegar, salt, basil and oregano and allow to infuse.
Heat oil. Fry gyros in it in portions and roast at high temperature until crispy brown. Extinguish with a little water and add the long grain rice. Season with salt and freshly ground pepper.
Arrange gyros with long grain rice, onions and tatziki and serve.
