For the apple-nut muffins, peel the apples, cut out the cores and cut into small cubes. Mix the flour with the baking powder, cinnamon, nuts and apple pieces.
Cream the egg with the sugar and then beat in the sugar, vanilla sugar, buttermilk and oil. Stir this into the flour mixture.
Pour the batter into the muffin tins and bake for about 20-25 minutes at 180 degrees.
