For the potato salad, boil the potatoes, let cool, peel and cut into even slices two millimeters thick.

From a vinaigrette, mix wine vinegar, beef broth, olive oil, mustard, kitchen herbs, onion juice, sugar, salt and pepper until well combined. Allow the potato salad to infuse a little before serving.
