Walpurgis Night: Red food, presented in lush green, is considered a symbol of fertility.

Sensual, sumptuous and respectful is the meal that belongs to a Walpurgis Night celebration, explains Veronika Huber, who organizes such seasonal rituals alike. The name of the “witches” celebration refers to Abbess Walpurga, patroness of pregnant women. The beginnings of this custom date back to the time before Christ: women danced all night around a fire, asking nature for rich harvest. After the inquisitorial Catholic Church persecuted these women as witches, Walpurgis Night was hardly celebrated anymore. With the new women’s movement, the last night of April kept a new meaning, the witches became a symbol of the strong woman.

“Special recipes or food rituals for this celebration do not exist,” knows Veronika Huber. On the last Walpurgis Night, she chose red food – red because the women danced around the fire dressed in all shades of red: carrots, strawberries, red beets, rhubarb and radishes with leaves in the rich green of spring as a symbol of fertility.

Red risotto: Prick beet with a fork, wrap in aluminum foil and steam in the fire until soft. Then remove the peel and chop into small pieces.
