For the red gooseberry jelly, wash the gooseberries and put them in a pot with 100 ml of water. Bring to the boil and then allow to cool slightly.
Put the gooseberries through the liquid and collect the juice in a saucepan. Add the jelling sugar to the gooseberry juice and bring to a boil while stirring.
Boil until the jelly test is positive. Pour the still hot red gooseberry jelly into sterile twist-off jars.
