Instructions:

Separate the eggs, beat the egg whites with a pinch of salt and 1 tbsp. sugar until stiff.

Beat the egg yolks with 1 tablespoon sugar until foamy, stir in the mascarpone. Sift the cornstarch over it and stir the dough until smooth. Carefully fold in the snow.

Melt butter in a small frying pan and fry slightly thicker pancakes over medium heat until golden brown on each side. Drain the cherries and collect the cherry juice.

Mix some of the cherry juice with sugar and cornstarch. Bring the remaining cherry juice and the cherry brandy to the boil and stir in the starch mixture with a whisk, bring to the boil briefly and season the sauce with cinnamon and lemon juice.

Add the cherries and stir in well. Arrange cherry sauce on a plate and place the pancakes on top. Finish with a scoop of vanilla ice cream.
