Instructions:

Remove the bone from the shoulder of the wild boar. Remove the meat from tendons and skins. Coat the inside with mustard. Cut gherkins and onions and also spread evenly on the meat. Roll up the meat and tie with ribbon. A pork net will help as well. (If you don’t want the effort, you can also buy the wrapped roast ready-made at the dealer).

Season with salt and pepper on the outside and fry heartily in clarified butter. Add the roasted vegetables, consisting of chopped celery, parsley root, leek and carrot. Also add the juniper. Stew everything over medium heat for three hours, turning several times.

At the end add the jam. Next, let the roast rest for 20 minutes.

Deglaze the roast stock with red wine, thicken with potato starch as needed.

Sauté red cabbage in clarified butter. Add apples and cloves. Season with salt and sugar.

Our tip: Use sweet red wine for a sweet note and rather dry wine for flavorful, spicy dishes.
