Instructions:

For the walnut bread, prepare a dampfl with some spelt flour, the sugar and the yeast. Then add the remaining flour, salt and oil and knead with the water to a smooth bread dough.

Work in the walnuts and let the bread dough rise at room temperature for about 1 hour. Then knead vigorously again and place the dough in an oblong cake pan. Let rise again.

Preheat the oven to 230°C. Place an ovenproof container with water in the oven. Put the bread in it and bake for 10 minutes. Then reduce the heat to 200°C and bake the walnut bread for another 30 minutes.
