For the vanilla mousse on strawberry puree, wash the strawberries and remove the blossoms. Then puree them very finely in a blender and sweeten a little if necessary.
Whip the low-fat curd cheese with the vanilla, honey and cream with a hand mixer to a fine foam. At the end, add the mineral water and whip.
Spread the strawberry puree on plates and arrange the curd cheese foam on top.
