Bring whipping cream, salt, milk and half of the butter to a boil. Mix in the semolina and leave to swell for about 2 hours with the lid on. Crush the quantity and roast it slowly in the remaining butter, loosening it throughout. Serve with compote or coffee or blueberry puree.
