Instructions:

For the sushi donuts, prepare the rice in twice the amount of water in a saucepan or rice stove according to package directions. Meanwhile, heat the rice vinegar with sugar and salt in a small saucepan until sugar and salt are dissolved.

Stir into the fully cooked rice while still warm and let cool at room temperature.

Meanwhile, cut the smoked ham into strips about 2 cm wide. Slice the tuna paper-thin, then cut into thin strips as well. The best way to do this is to freeze the tuna briefly beforehand.

Cut the avocados in half, remove the stones, and cut the avocados into thin lozenges for topping. Peel the cucumber, cut in half lengthwise, scrape out the seeds. Peel thin strips with a peeler.

Wash and clean the radishes, leave some green, slice radishes thinly as well. Brush bagel molds with oil, press the fully cooked rice firmly into the molds. Lift out and wrap as desired. Garnish the sushi donuts with sesame seeds.

For the ponzu sauce, squeeze the lime and mix the juice with the remaining ingredients.
