For the spelt spice bread, mix water with yeast and sourdough until the yeast has dissolved. Add all ingredients to the sourdough mixture and knead for 20 minutes (preferably with a food processor).
Cover the dough and let it rise in a warm place for 60 minutes, then knead again and shape into a loaf. Flour well, place in a proofing basket and let rise in a warm place until double in height.
Preheat the oven to 220°. Place a bowl of water on the bottom of the oven. Turn the dough out onto a baking sheet and bake for 10 minutes, then reduce the temperature to 200 °C and bake for another 30 minutes.
Leave to cool on a rack.
