For the snails in puff pastry, roll out the puff pastry on a floured work surface and divide into 12 squares. Divide the foie gras into 12 pieces as well. Now place 2 snails and 1 piece of foie gras on each piece of pastry. Season delicately with freshly ground salt and drizzle some liquid herb butter on top. Shape dough into small bags and press down well (tie with chives if desired). Carefully brush with beaten egg yolk and bake in a preheated oven at 180 °C for about 15 minutes until golden brown.
