Cut the cheese into small cubes. Press the garlic through a press or cut very small. Chop the parsley, cilantro and celery leaves and mix with the garlic in the cheese. Pour olive oil over everything and let it cool, covered, for at least 120 minutes. It is important to use high quality olive oil.
Drink: mulsum or white wine (sweet white wine flavored with honey and anise).
Our tip: It is best to use fresh herbs for a particularly good aroma!
