For the salad hearts with fried shrimp, first mix all the ingredients together for the dressing, season well with salt and pepper.
Cut the feta into cubes. Pick apart the romaine lettuce hearts, remove the stalk, wash well and pat dry. Coarsely chop the nuts. Remove the stems from the tomatoes, cut them into quarters and remove the seeds. Pluck the cress.
Sauté the shrimp in a little oil, season with lemon juice, salt, pepper and chopped parsley.
Season all the ingredients with the dressing and arrange flat on a plate, place the shrimp on top and serve the salad hearts with fried shrimp immediately.
