Separate the yolks and whites of the hard-boiled eggs. Chop the egg whites very finely and mash the yolks with a fork. Rub both with the room-warm butter and the also very finely chopped ham to a smooth mass, mix in the parsley, season with salt and pepper and work through again thoroughly with a fork.
