For the roasted mushrooms with egg, finely chop the onion and fry in butter until golden, cut the mushrooms into flakes and fry.

Beat the eggs and pour over the mushrooms and mix until the eggs have set. Season with salt and pepper.

Garnish with freshly chopped parsley before serving. Tastes great with green salad and a toasted slice of wholemeal bread !
