In the first step, clamp the professional patisserie hook. For the rice pudding, add milk, salt, cinnamon, lemon zest and, if desired, a little butter to the Cooking Chef bowl. Set the temperature to 140 °C and select cooking stirring interval level 3.

Heat for approx. 5 minutes until the milk boils, then add the rice, reduce the temperature to 100 °C and steam covered for another 20 to 25 minutes at cooking-stirring interval level 2. To do this, put on the splash guard. Pour in a little more milk if desired.

Season the rice pudding with vanilla sugar and sugar to taste. Check the amount of liquid and the cooking level several times.

The rice pudding can be served and drizzled with brown butter if desired.
