For the pork medallions wrapped in bacon, cut the leeks into slices about 1 cm thick and boil in water for about 20 minutes. Puree the leeks together with some leek water with a hand blender.

Season with salt and pepper. Add whipped cream. Thicken with Fixeinbrenn. Cut pork medallions into 3 cm thick slices. Season with salt and pepper. Fry lightly in oil.

Wrap with bacon and bake in oven for about 15 minutes at 180°C convection oven. Bake croquettes in the oven as well.
