For the pineapple curry, peel the pineapple and cut into bite-sized pieces. Wash the spring onion and cut into rings. Peel and finely chop the garlic.

Sauté everything with ginger in oil. Add water until pineapple is nice and soft. Add samabal olek. Finally add curry and parsley and season with salt and pepper.
