In my youth, the omelette soufflee or flambee was one of the most popular desserts. It is very easy to make and looks very festive, especially when flambéed with a few spoonfuls of rum.
Beat the egg yolks and sugar (1) until creamy and add the lemon zest. Now mix the egg whites until stiff and fold into the egg yolk mixture. Pour the mixture into a well-buttered baking dish and bake for fifteen to twenty minutes in an oven heated to 180°C.
They can also be baked in a large omelet pan over medium heat with the lid closed.
At the table, sprinkle them with sugar (2) and slightly warmed rum, which you light.
Perhaps it is worth a main test before the feast, although hardly a little bit can run across.
