For the ginger lemon nuts, separate yolks and egg whites. Mix egg whites, grated ginger, lemon peel and sugar well with the nuts.

Line a baking tray with baking paper and spread the nut mixture evenly on the baking tray and roast the nuts in the oven at 180 °C until they get a nice brown color.
