Instructions:

(approx. 20 min) Remove seeds from melons and cut out small balls with a baller. Scrape out the remaining melon flesh with a spoon and grind finely in a hand mixer.

Mix the mango chutney with honey, lime juice and juice of one lemon, melon puree and add the scraped vanilla pulp. Add the melon balls and leave in the refrigerator for half an hour.

Then add the apple, passion fruit and orange juice and fill into nice large goblets or possibly well precooled small soup tureens, garnish with mint croissants.

Our tip: As an alternative to fresh herbs, you can also use frozen ones – these also stand out for their fresh taste!
