For the 1st “Santan” coconut-water mixture, mix 2/3 of the coconut powder with water (1). For the 2nd santan, mix one third of the coconut powder with water (2). Cut the melanzane in half lengthwise. Cut 5 cm long pieces.
Heat oil, fry onions until light brown. Add herb mixture and fry lightly. 2. slowly pour in Santan and add curry powder. Allow to boil.
Cook for approx. 15 minutes. Add sugar, shrimp, melanzane, salt & monosodium glutamate.
When the melanzane is almost cooked, add the 1st santan and cook for a few minutes.
Eat everything together with long grain rice.
Our tip: As an alternative to fresh herbs, you can use frozen ones – they also have a fresh taste!
